what does it cost?

Prices are based on the hanging weight provided by the butcher. We’ll post our current per-pound pricing on the website, along with deposit amounts to reserve your beef.

Here’s how it works step by step:

  1. Determine Hanging Weight

    • The butcher weighs the carcass (without hide, head, hooves, and innards).

    • Example: A half beef might have a hanging weight of 350 lbs.

  2. Price per Pound

    • Your cost is calculated on that hanging weight using our set price per pound (e.g., $6/lb).

    • Example: 350 lbs × $6.00 = $2,100.00.

  3. Deposit Applied

    • Your deposit goes toward this total.

  4. Take-Home Meat

    • After trimming, deboning, and packaging, you’ll take home about 60–65% of the hanging weight.

    • From that 350 lb half, you’d bring home about 220–230 lbs packaged beef.

Can i choose my cuts?

Yes! The butcher provides a cut sheet where you can customize your preferences (steak thickness, roast size, ground beef packaging, etc.). If you’re unsure, we’re happy to walk you through it.
